Today marks 13 weeks until the 2015 food and wine conference and my post to celebrate it was inspired by the Chicken Fajita Bowls on the Family Foodie Blog. As usual I took a lot of shortcuts with this dish because I’m a lazy cook. I used yellow rice and just threw in some shredded cooked chicken that was cooked in taco seasonings and added to it peppers, salsa, cheese and sour cream.
